Easy Meal Idea: Buffalo Chicken Sliders Recipe
If you’re looking for something ridiculously easy for lunch or dinner, but that will also send your taste-buds into a taste frenzy, this is it! And if you’re looking for recipes with buffalo chicken, this is also it!
Recipe for Buffalo Chicken Sliders
Ingredients
2 12.5 oz. Cans White Meat Chicken (for the real easy version. I share the crockpot-option below as well)
1 Package Ranch Seasoning
1 Stick of Butter (I said this was tasty, not healthy😋)
1/2 C - 1 C Hot Sauce
1 Package Hawaiian Rolls
Cheddar Cheese Slices (it won’t take a whole package - usually 4-6 slices)
Instructions
Pre-heat oven to 350.
In microwave safe bowl, melt butter and add ranch seasoning. The seasoning will not dissolve completely, so it’s important to keep mixing for the below steps.
Set aside.
In a separate bowl, stir half of above mixture into chicken (make sure to drain the broth from the cans)
Add hot sauce and mix. You can add as much or as little as you like - I typically do 3/4 C to 1 C.
Separate rolls (top and bottom).
Add bottoms to baking dish.
Add cheese slices to roll bottoms.
Add chicken mixture to the top of the cheese (there might be extra, keep reading for how to use!)
Add roll tops to sandwiches and spoon remaining butter/ranch mix over the top.
Bake for 10-15 minutes, until sandwiches start to crisp.

If you’re the kind of chef that likes to make things without measuring, this is the recipe for you. A friend of mine asked for this recipe not too long ago and I was like, wait, “how much hot sauce do I actually use?” I literally think I’ve never used a recipe.
Now, I mentioned using a crock pot for this. You could totally make the whole chicken portion in the crock pot but I usually just do the chicken breasts. I use 2-3 if I’m only making the buffalo chicken sliders, or if I want to make something else later in the week with shredded chicken, I’ll use more.
After they’ve cooked, shred and split in half. I like to keep half for the sandwiches and use the rest in soup or rice bowls. In fact, I’ll try to plan my meals around the chicken that week:)
Back to the sliders, even if I use the 2-3 chicken breasts in a crockpot, as long as they’re larger, I’ll have some extra chicken. I go ahead and make everything like normal, and that extra little bit is PERFECT on salads or a piece of toast. I’m sure there might be a different recipe for buffalo chicken salad, but honestly, this is delicious on a bed of lettuce with veggies.
With football season coming up, if you need ideas for party food, these will not last long. And yes, although they’re sliders, I usually use a fork. Serve with celery, chips and a side of ranch!
